My Omakase dining experience is made for those with an extreme love for food and life's indulgences. To live to eat means taking pleasure in trying new, exciting and entering dishes. For me and our guests, eating is more than a hobby, it's a passion for the taste, texture and the new.
The traditional meaning of "Omakase" is “I’ll leave it up to you.”; meaning the experience allows full trust in the chef to choose the best ingredients available and to create a personalized multi-course meal. The Omakase Room by Vinh is located inside Mercedes Benz Heritage Valley; where guests can sit back, relax, and let me take control of the dining experience and showcase my skill and creativity. It is the perfect way for customers to learn more about personal tastes and to try new and unusual flavours in my culinary style.

ABOUT
20 years in the making.
I grew up in Vietnam and came to Canada when I was 10 years of age. When I was 16, I started my career in the food industry and since then have gained a lot of experience and knowledge over the years. Many of my dishes have a strong connection to my Vietnamese culture. From the cooking techniques, unique ingredients, eating style, and traditional flavours, the entire dining experience is drawn from my roots. I am still constantly learning, and my passion won’t stop me from pursuing this dream anytime soon. I have a deep love and appreciation for food and will always seek new knowledge and experiences to hone and enhance my skillset.
Growing up, I watched Anthony Bourdain on television with awe. He has taught me many skills and values about the industry. One word that has stuck with me for many years is Kaizen; It is a Japanese term that refers to the practice of continuous improvement, that a true artist must never stop learning. It’s a business philosophy that involves making small, incremental changes on a regular basis in order to improve efficiency, process, procedure, reduce waste, and increase overall quality.

I’m very particular about the ingredients I use in my kitchen. I often go to great lengths to travel and source the best and freshest possible ingredients all over the world to ensure the dining experience is seamless. I love being a chef and meeting new people is one of the best parts. I have a strong commitment to ensure that my customers have a great time and that they’re able to enjoy the best food possible with the most personalized experience. This attitude is crucial to the success of my business and something I truly value with each guest. The outcome is then an elevated dining experience heightened for all your senses.
