20 years in the making.

I was born in Vietnam and moved to Canada at the age of 10, where my journey with food truly began. By the time I was 16, I had already started my career in the culinary industry, gaining invaluable experience that has shaped my approach as a luxury omakase sushi chef in Edmonton, Alberta. Many of my dishes carry deep connections to my Vietnamese heritage—through cooking techniques, distinctive ingredients, dining rituals, and traditional flavors—infusing every omakase experience with authenticity and soul. My passion for food continues to grow, driving me to constantly seek new knowledge and refine my skills in the pursuit of culinary excellence.

Growing up, I was deeply inspired by Anthony Bourdain, whose storytelling and values left a lasting impression on me. One philosophy that has guided me throughout my career is Kaizen—a Japanese concept meaning “continuous improvement.” For me, Kaizen is more than a business practice; it is a way of life as a chef. It reminds me that true artistry lies in never stopping the pursuit of growth, always striving to elevate the dining experience, and ensuring that every guest who joins me for omakase in Edmonton enjoys the highest quality, innovation, and care.
